Chicken Biryani

Here's a simple Chicken Biryani recipe for you:

1. **Ingredients:**
   - 2 cups basmati rice
   - 500g chicken, cut into pieces
   - 1 large onion, thinly sliced
   - 2 tomatoes, chopped
   - 1/2 cup plain yogurt
   - 1/4 cup biryani masala
   - 1/4 cup chopped mint leaves
   - 1/4 cup chopped coriander leaves
   - 4 cups water
   - Ghee or oil
   - Salt to taste

2. **Marination:**
   - Marinate chicken with yogurt, biryani masala, mint leaves, coriander leaves, and salt. Let it marinate for at least 1 hour.

3. **Rice Preparation:**
   - Wash and soak basmati rice for 30 minutes. Cook rice in 4 cups of water until 70% done. Drain excess water.

4. **Layering:**
   - In a heavy-bottomed pan, layer half-cooked rice, marinated chicken, sliced onions, and tomatoes.
   - Repeat the layers, finishing with a layer of rice on top.

5. **Cooking:**
   - Drizzle ghee or oil on top. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes until the chicken is cooked and the rice is fully done.

   - Gently fluff the biryani with a fork. Garnish with chopped coriander leaves. Serve hot with raita.
