A comforting Chicken Soup is perfect for any occasion. Here's a basic recipe:
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup egg noodles or rice (optional)
- Fresh parsley for garnish
Instructions:
1. In a large pot, heat olive oil over medium heat. Add diced onions, carrots, celery, and garlic. Sauté until vegetables are tender.
2. Add chicken breasts to the pot and brown them slightly.
3. Pour in chicken broth and add thyme, bay leaf, salt, and pepper. Bring to a boil.
4. Reduce heat, cover, and simmer until the chicken is cooked through (about 15-20 minutes).
5. Remove chicken from the pot, shred it with two forks, and return it to the pot.
6. If using, add egg noodles or rice and cook until they are tender.
7. Adjust seasoning if needed. Remove the bay leaf.
8. Serve hot, garnished with fresh parsley.
