golgappa (pani poori)

Non-vegetarian pani puri, also known as "golgappa" in some regions, is a popular street food in India. It typically consists of hollow, crispy puris filled with a flavorful and spicy mixture of non-vegetarian ingredients. Here's a basic recipe for non-vegetarian pani puri:

**Ingredients**:

**For the Puri**:

- Golgappa puris (readily available at Indian stores or homemade)

**For the Filling**:

- 1 cup cooked and shredded chicken or mutton (your choice)

- 1/2 cup finely chopped onions

- 1/2 cup boiled and mashed potatoes

- 1/4 cup finely chopped cilantro (coriander leaves)

- 1/4 cup tamarind chutney

- 1/4 cup green chutney (made with mint and coriander)

- Salt to taste

- Red chili powder, to taste (for a spicy kick)

- Chaat masala, to taste (for additional flavor)

**For the Spiced Water (Pani)**:

- 1 cup tamarind pulp

- 1/4 cup mint leaves

- 1/4 cup cilantro leaves

- 2-3 green chilies (adjust for spiciness)

- 1 teaspoon roasted cumin powder

- Salt to taste

- Black salt to taste

- 1 tablespoon sugar

- 2 cups water

**Instructions**:

**1. Prepare the Filling**:

- In a bowl, combine the cooked and shredded chicken or mutton, finely chopped onions, mashed potatoes, and chopped cilantro.

- Season the mixture with salt, red chili powder, and chaat masala to your taste. Toss everything together until well combined.

**2. Prepare the Spiced Water (Pani)**:

- In a blender, combine tamarind pulp, mint leaves, cilantro leaves, green chilies, roasted cumin powder, salt, black salt, sugar, and water.

- Blend until you have a smooth and tangy green chutney. Adjust the water quantity if you prefer it more or less diluted.

**3. Assemble the Non-Vegetarian Pani Puri**:

- Gently make a hole in the top of each golgappa puri, creating a small cavity without breaking the shell.

- Fill the cavity with a spoonful of the prepared non-vegetarian mixture.

- Drizzle a little tamarind chutney and green chutney over the filling.

- Finally, pour the spiced water (pani) into the filled puris.

**4. Serve and Enjoy**:

- Serve the non-vegetarian pani puri immediately, as they are best when enjoyed fresh and crispy.

Non-vegetarian pani puri is a delightful and spicy treat that combines the crunchy texture of the puris with the savory and tangy flavors of the filling and spiced water. Adjust the spiciness and seasoning to suit your taste preferences.
