 Hot and Sour Soup is a popular Chinese soup known for its bold flavors, featuring a combination of heat from chili peppers and tanginess from vinegar. Here's a recipe to make Hot and Sour Soup at home:


**Ingredients**:


**For the Soup**:


- 4 cups chicken or vegetable broth

- 1/2 cup firm tofu, cut into small cubes

- 1/2 cup wood ear mushrooms or shiitake mushrooms, soaked and thinly sliced

- 1/2 cup bamboo shoots, thinly sliced

- 1/4 cup dried lily flowers, soaked and chopped (optional)

- 1/4 cup dried black fungus (wood ear mushrooms), soaked and thinly sliced

- 1/4 cup thinly sliced pork or cooked chicken (optional)

- 2-3 dried red chilies, seeds removed and finely chopped (adjust to taste)

- 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

- 2 eggs, beaten

- 3 tablespoons soy sauce

- 2 tablespoons rice vinegar

- 1 teaspoon sugar

- 1/2 teaspoon ground white pepper (adjust to taste)

- 1/2 teaspoon sesame oil

- 1 green onion, thinly sliced, for garnish

- Fresh cilantro, for garnish (optional)


**Instructions**:


**1. Prepare the Ingredients**:


- Soak the wood ear mushrooms, dried lily flowers, and dried black fungus in separate bowls of hot water for about 15-20 minutes until they become soft. Then, drain, rinse, and chop them as needed.


- Cut the tofu into small cubes.


- If you're using pork or chicken, thinly slice it into small pieces.


**2. Cook the Ingredients**:


- In a large pot, bring the chicken or vegetable broth to a boil.


- Add the tofu, mushrooms, bamboo shoots, dried lily flowers, dried black fungus, and sliced pork or chicken (if using). Simmer for about 5-10 minutes, or until the ingredients are cooked through.


**3. Season the Soup**:


- Add the soy sauce, rice vinegar, sugar, and ground white pepper. Adjust the seasonings to taste.


**4. Thicken the Soup**:


- In a small bowl, mix the cornstarch with water to create a slurry.


- Slowly pour the cornstarch slurry into the soup, stirring constantly to thicken the soup.
