jalebi

Jalebi is a sweet and syrupy dessert enjoyed in Pakistan and many other South Asian countries. Here's a simple recipe:

Ingredients:

For the batter:
- 1 cup all-purpose flour (maida)
- 1 tablespoon gram flour (besan)
- 1/2 teaspoon baking soda
- 1 cup yogurt
- Water (as needed for batter consistency)

For the sugar syrup:
- 1 cup sugar
- 1/2 cup water
- A few saffron strands (optional)
- 1/2 teaspoon cardamom powder

Instructions:

1. In a bowl, mix all-purpose flour, gram flour, baking soda, and yogurt to form a smooth batter. Add water if needed to achieve a thick consistency.

2. Pour the batter into a squeeze bottle or a piping bag with a small nozzle.

3. In a separate saucepan, combine sugar and water to make the sugar syrup. Add saffron strands and cardamom powder. Boil until it reaches a one-string consistency.

4. Heat oil in a pan for deep frying. Squeeze the batter into the hot oil in a circular motion to form spirals. Fry until they become golden brown and crispy.

5. Remove the jalebis from the oil and immediately dip them into the warm sugar syrup, ensuring they are coated well.

6. Allow the jalebis to soak in the syrup for a few minutes, then remove and serve.

Enjoy your homemade jalebis! They're best when served warm.
