3. **Make the Paste:** In a bowl, mix garlic, ginger, sugar, fish sauce, soy sauce, and red pepper flakes to create a paste.

4. **Combine Ingredients:** Combine the vegetables, green onions, and paste. Massage the paste into the vegetables, making sure they are well coated.

5. **Fermenting:** Pack the mixture into a clean, airtight jar, pressing it down to remove air bubbles. Leave some space at the top. Seal the jar.

6. **Fermenting Process:** Leave the jar at room temperature for about 1-5 days, depending on your desired level of fermentation. Check daily, and once it reaches the desired taste, refrigerate.
