Here's a simple recipe for Lemon Pickle:
1. **Ingredients:**
- 8-10 lemons
- 1/2 cup mustard seeds
- 2 tablespoons fenugreek seeds
- 1 cup red chili powder
- 1 tablespoon turmeric powder
- 1/2 cup salt
- 1/2 cup sesame oil
2. **Preparation:**
- Wash and dry lemons thoroughly. Cut them into small pieces, discarding seeds.
3. **Sun-drying:**
- Spread the lemon pieces in the sunlight for a few hours until they are partially dried.
4. **Roasting Spices:**
- Dry roast mustard seeds and fenugreek seeds separately until they release their aroma. Let them cool and grind them into a coarse powder.
5. **Mixing:**
- In a large bowl, mix the partially dried lemon pieces with mustard-fenugreek powder, red chili powder, turmeric powder, and salt.
6. **Storage:**
- Heat sesame oil and let it cool. Add it to the lemon-spice mixture and mix well. Store the lemon pickle in a clean, airtight jar.
