Making Mole is a bit more involved, but here's a simplified recipe for Mole:

Ingredients:
- 2 dried ancho chilies
- 2 dried mulato chilies
- 2 dried pasilla chilies
- 2 tablespoons vegetable oil
- 1/2 cup almonds
- 1/4 cup raisins
- 1/4 cup sesame seeds
- 2 corn tortillas, torn into pieces
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 3 cups chicken or vegetable broth
- 3 ounces unsweetened chocolate, chopped
- Salt and pepper to taste
- Sugar to taste (optional)

Instructions:
1. Remove the seeds and stems from the dried chilies. Toast them in a dry pan until fragrant, then soak them in hot water for about 20 minutes.

2. In the same pan, heat oil over medium heat. Add almonds, raisins, sesame seeds, torn tortillas, chopped onion, and minced garlic. Sauté until the ingredients are lightly browned.

3. Place the sautéed mixture, soaked chilies (drained), and spices in a blender. Blend until smooth, adding some soaking liquid if needed.

4. In the same pan, pour the blended mixture. Add broth, chopped chocolate, salt, and pepper. Simmer for about 20-30 minutes, stirring occasionally.

5. Adjust the seasoning and, if desired, add a bit of sugar to balance the flavors.

Serve the Mole sauce over chicken, turkey, or enchiladas. Enjoy the rich and complex flavors!
