Nhingi is a traditional Zimbabwean dish made from pumpkins. Here's a basic recipe for Nhingi:
Ingredients:
- 1 medium-sized pumpkin
- 1 cup cornmeal
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons vegetable oil
- Salt to taste
Instructions:
1. Peel and dice the pumpkin into small, bite-sized pieces.
2. In a pot, boil the pumpkin until it becomes tender. Drain any excess water and set aside.
3. In a separate pan, heat vegetable oil over medium heat.
4. Add chopped onions to the pan and sauté until they become translucent.
5. Add diced tomatoes to the onions and cook until they soften.
6. Stir in the boiled pumpkin pieces, mixing them with the onions and tomatoes.
7. In a bowl, mix the cornmeal with water to form a thick paste.
8. Gradually add the cornmeal paste to the pumpkin mixture, stirring continuously to avoid lumps.
9. Cook the Nhingi mixture for about 10-15 minutes, or until the cornmeal is fully cooked and the consistency is thick.
10. Add salt to taste and stir well.
