Mysore Pak
Mysore Pak is a famous South Indian sweet made primarily from besan (chickpea flour), ghee, and sugar. Here's a traditional recipe:
Ingredients:
- 1 cup besan (chickpea flour)
- 1 cup ghee
- 1 cup sugar
- 1/4 cup water
- A pinch of cardamom powder
Instructions:
1. **Prepare Besan Mixture:**
- Sift besan to remove any lumps.
- In a heavy-bottomed pan, heat ghee. Add the besan and roast it on low heat until it releases a nutty aroma. Be careful not to burn it.
2. **Make Sugar Syrup:**
- In a separate pan, combine sugar and water to make a sugar syrup. Cook until it reaches a one-string consistency.
3. **Combine and Stir:**
- Add the sugar syrup to the roasted besan gradually, stirring continuously to avoid lumps.
4. **Cook the Mixture:**
- Keep stirring the mixture on low heat. As it thickens, add ghee in small quantities at regular intervals.
5. **Check Consistency:**
- The mixture should turn frothy and start leaving the sides of the pan. It will become smooth and glossy.
6. **Set in a Tray:**
- Grease a tray with ghee. Pour the mixture into the tray and smooth the surface.
7. **Cut and Cool:**
- Allow it to cool for a few minutes. While it's still warm, cut it into diamond-shaped or square pieces.
8. **Serve:**
- Once completely cool, your Mysore Pak is ready to be enjoyed!
