Palakova, also known as Palgova or Kalakand, is a popular South Indian sweet made from condensed milk. Here's a simple recipe for preparing Palakova:

Ingredients:

- 1 liter full-fat milk
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Ghee for greasing

Instructions:

1. **Boil Milk:**
   - In a heavy-bottomed pan, bring the milk to a boil.

2. **Simmer:**
   - Once it boils, reduce the heat to low and let it simmer. Stir occasionally to prevent it from sticking to the bottom.

3. **Reduce and Add Sugar:**
   - As the milk reduces and thickens, add sugar. Keep stirring continuously.

4. **Add Flavor:**
   - When the mixture starts thickening, add cardamom powder and saffron strands (if using). Continue stirring.

5. **Consistency Check:**
   - Keep cooking until the mixture reaches a solid, halwa-like consistency. It should leave the sides of the pan.

6. **Set in a Tray:**
   - Grease a tray or plate with ghee. Transfer the thickened mixture to the tray and spread it evenly.

7. **Cool and Cut:**
   - Allow it to cool completely. Once cooled, cut it into desired shapes, traditionally square or diamond-shaped pieces.

8. **Serve:**
   - Your Palakova is ready to be served!
