Pongal

Here's a simple recipe for the South Indian dish Pongal:

**Ingredients:**

1. 1 cup rice
2. 1/4 cup split yellow moong dal (lentils)
3. 3 cups water
4. 1 cup milk
5. A pinch of asafoetida (hing)
6. 1/2 teaspoon pepper
7. 1/2 teaspoon cumin seeds
8. Ginger, finely chopped
9. Ghee (clarified butter)
10. Cashews and curry leaves for seasoning
11. Salt to taste

**Instructions:**

1. **Cooking Rice and Dal:**
   - Wash rice and dal together. In a pressure cooker, add rice, dal, water, and a pinch of salt. Cook until both rice and dal are soft.

2. **Mashing:**
   - Mash the cooked rice and dal mixture well. Add milk and continue to cook, stirring occasionally.

3. **Seasoning:**
   - In a separate pan, heat ghee. Add cumin seeds, pepper, chopped ginger, cashews, curry leaves, and asafoetida. Sauté until cashews are golden.

4. **Mixing:**
   - Add the seasoning to the mashed rice and dal mixture. Mix well.

5. **Finishing Touch:**
   - Adjust salt and continue to cook until everything is well combined.

Pongal is ready to be served! Traditionally, it is enjoyed with sambar and coconut chutney.
