rice and lentil soup

Certainly! Rice and lentil soup, also known as Khichuri or Khichdi, is a comforting and nutritious dish. Here's a simple recipe:

Ingredients:
- 1 cup rice
- 1/2 cup split yellow lentils (moong dal)
- 1 onion, finely chopped
- 1 tomato, chopped
- 1/2 inch ginger, grated
- 2 cloves garlic, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 2-3 green chilies, chopped
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- Water

Instructions:
1. Rinse the rice and lentils together under cold water until the water runs clear.
2. In a large pot, heat ghee over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until golden brown.
4. Add grated ginger and minced garlic. Sauté for a minute until the raw smell disappears.
5. Add chopped tomatoes, green chilies, and turmeric powder. Cook until the tomatoes are soft.
6. Add the rinsed rice and lentils to the pot. Mix well with the spices.
7. Pour in the appropriate amount of water (usually 4 cups for 1 cup rice and 1/2 cup lentils). Add salt to taste.
8. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer until the rice and lentils are cooked and the mixture has a porridge-like consistency.
9. You can adjust the consistency by adding more water if needed.
10. Serve hot, optionally garnished with chopped cilantro.

Khichuri is often enjoyed with a side of yogurt, pickles, or fried vegetables. Enjoy your hearty rice and lentil soup!
