Ingredients:
- 500g fresh spinach (or a combination of spinach and mustard greens)
- 1 onion, finely chopped
- 2 tomatoes, chopped

- 1/2 cup clarified butter (ghee)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Optional: 1/2 cup cream for added richness
Instructions:
1. Wash the spinach thoroughly and blanch it in hot water for 2-3 minutes. Drain and blend it to a coarse paste.
2. In a large pan, heat clarified butter (ghee) and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and green chilies. Sauté for a minute.
4. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil begins to separate.
5. Add the spinach paste and mix well. Let it simmer for 10-15 minutes, stirring occasionally.
6. Sprinkle garam masala and optionally add cream for richness. Mix and cook for an additional 5 minutes.
7. Adjust salt and spices to taste.
