Sambar recipe

Here's a flavorful South Indian Sambar recipe:

1. **Ingredients:**
   - 1 cup of toor dal (split pigeon peas)
   - Mixed vegetables (carrots, drumsticks, beans, pumpkin, etc.)
   - 1 onion, chopped
   - 2 tomatoes, chopped
   - Tamarind pulp (size of a small lemon)
   - Sambar powder (2-3 tablespoons)
   - 1 teaspoon of mustard seeds
   - A pinch of asafoetida (hing)
   - Curry leaves
   - Coriander leaves for garnish
   - Salt to taste

2. **Preparation:**
   - Cook toor dal until soft and mash it.

3. **Cooking Sambar:**
   - Boil mixed vegetables in tamarind pulp until cooked.
   - Add chopped onions, tomatoes, sambar powder, and salt. Let it simmer.

4. **Tadka/Tempering:**
   - In a separate pan, heat oil. Add mustard seeds, asafoetida, and curry leaves. Once mustard seeds splutter, add this tempering to the simmering sambar.

5. **Final Touch:**
   - Mix in the mashed toor dal and let it all cook together for a few minutes until flavors meld.
   - Garnish with coriander leaves.

Serve hot with rice or idli/dosa. Enjoy your homemade sambar!
