Sweet and Sour Pork

Sweet and Sour Pork is a classic Chinese-American dish known for its combination of crispy deep-fried pork pieces and a tangy, sweet, and slightly sour sauce. Here's a recipe to make Sweet and Sour Pork:

**Ingredients**:

**For the Pork**:

- 1 pound (450g) boneless pork, cut into bite-sized pieces (commonly pork loin or pork shoulder)

- 1 cup all-purpose flour

- 1/2 cup cornstarch

- 2 eggs, beaten

- Salt and black pepper, to taste

- Vegetable oil for deep frying

**For the Sweet and Sour Sauce**:

- 1/4 cup ketchup

- 1/4 cup white vinegar

- 1/4 cup granulated sugar

- 2 tablespoons soy sauce

- 1 tablespoon cornstarch

**For the Stir-Fry**:

- 1 bell pepper, cut into chunks

- 1 onion, cut into chunks

- 1/2 cup pineapple chunks (fresh or canned)

- 1 clove garlic, minced

- 1 teaspoon ginger, minced

- Vegetable oil for stir-frying

- Sliced green onions and sesame seeds for garnish (optional)

**Instructions**:

**1. Prepare the Pork**:

- In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.

- Dip the pork pieces in beaten eggs, then coat them with the flour mixture, pressing the coating onto the pork.

- Heat vegetable oil in a wok or deep pan over medium-high heat for deep frying. When the oil is hot (around 350°F or 175°C), carefully add the pork pieces in batches. Fry until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

**2. Prepare the Sweet and Sour Sauce**:

- In a small bowl, whisk together the ketchup, white vinegar, granulated sugar, soy sauce, and cornstarch until well combined. Set the sauce aside.

**3. Stir-Fry**:

- In a separate wok or large skillet, heat a little vegetable oil over medium-high heat.

- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

- Add the bell pepper, onion, and pineapple chunks. Stir-fry for a few minutes until the vegetables are slightly tender.

**4. Combine with Sauce**:

- Pour the prepared sweet and sour sauce over the stir-fried vegetables and bring it to a simmer. Let it cook for a few minutes until the sauce thickens.

**5. Combine the Pork**:

- Add the crispy fried pork pieces to the sauce and toss them until they are well coated.

**6. Serve**:

- Transfer your Sweet and Sour Pork to a serving plate. If desired, garnish with sliced green onions and sesame seeds.

Serve your Sweet and Sour Pork hot, typically with steamed rice. It's a delightful combination of crispy pork and a tangy, sweet, and slightly sour sauce. Adjust the sweetness and sourness to your preference by varying the amount of sugar and vinegar.
