Vada

Here's a simple Medu Vada recipe for you:

1. **Ingredients:**
   - 1 cup urad dal (black gram)
   - 1-2 green chilies, finely chopped
   - A handful of chopped coriander leaves
   - 1 teaspoon cumin seeds
   - Salt to taste
   - Oil for frying

2. **Preparation:**
   - Soak urad dal in water for 3-4 hours. Drain the water.

3. **Grinding:**
   - Grind the soaked urad dal into a smooth batter. Add minimal water while grinding.

4. **Mixing:**
   - Add chopped green chilies, cumin seeds, coriander leaves, and salt to the batter. Mix well.

5. **Shaping:**
   - Wet your hands, take a portion of the batter, and shape it into a flat, round vada. You can make a hole in the center for traditional medu vada.

6. **Frying:**
   - Heat oil in a pan. Carefully slide the vadas into the hot oil and fry until they turn golden brown and crispy.

7. **Draining:**
   - Remove the vadas from the oil and place them on a paper towel to drain excess oil.

Serve hot with coconut chutney or sambar. Enjoy your crispy Medu Vadas!
