"Vegetable Biryani
Ingredients:
- 1 cup basmati rice
- Assorted vegetables (carrots, peas, potatoes, etc.)
- 1 large onion, thinly sliced
- 1/2 cup yogurt
- 2 tomatoes, chopped
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro
- 1/4 cup fried onions (for garnish)
- Ghee or oil for cooking
- Biryani masala or a mix of ground spices (cumin, coriander, cardamom, cloves, cinnamon)
- Saffron strands soaked in warm milk (for color and flavor)
- Salt to taste
Instructions:
1. Rinse the basmati rice and soak it for 30 minutes. Cook the rice until it's 70-80% done.
2. In a pan, sauté sliced onions until golden brown. Set aside a portion for garnish.
3. In the same pan, add assorted vegetables and cook until they are partially tender.
4. Add chopped tomatoes, biryani masala, yogurt, mint, cilantro, and salt. Cook until the vegetables are fully cooked.
5. In a deep, heavy-bottomed pan, layer half of the partially cooked rice, followed by the vegetable mixture. Repeat the layers.
6. Drizzle saffron-infused milk on top. Sprinkle fried onions and a bit of ghee.
7. Cover the pan tightly and cook on low heat until the rice is fully cooked and aromatic.
8. Gently fluff the biryani with a fork and serve hot.
