Roasted Tomato Soup Recipe:

Ingredients:
- 2 lbs tomatoes, halved
- 1 onion, quartered
- 4 cloves garlic, peeled
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream (optional)
- Fresh basil for garnish

Instructions:
1. Preheat your oven to 400°F (200°C).

2. Place halved tomatoes, quartered onion, and peeled garlic cloves on a baking sheet.

3. Drizzle with olive oil, sprinkle with salt, pepper, and dried thyme. Toss to coat evenly.

4. Roast in the oven for about 30-40 minutes or until the tomatoes are caramelized.

5. Transfer the roasted vegetables to a blender or food processor. Blend until smooth.

6. In a large pot, heat the blended mixture over medium heat. Add broth and stir well.

7. Bring the soup to a simmer, allowing flavors to meld for about 10-15 minutes.

8. If desired, stir in the heavy cream for added creaminess.

9. Season with additional salt and pepper to taste.

10. Serve hot, garnished with fresh basil.
