sweet potato and carrots soup

Sweet Potato and Carrot Soup Recipe:

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 large carrots, peeled and chopped
- 2 medium-sized sweet potatoes, peeled and diced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 can (14 oz) coconut milk
- Juice of 1 orange
- Chopped fresh cilantro for garnish (optional)

Instructions:
1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.

2. Add chopped carrots, sweet potatoes, ground cumin, ground coriander, and smoked paprika. Stir well to coat the vegetables in the spices.

3. Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat and simmer until the vegetables are tender (about 20 minutes).

4. Season with salt and pepper to taste.

5. Use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches.

6. Return the soup to the pot and stir in coconut milk and orange juice. Heat through.

7. Adjust seasoning if needed and serve hot, garnished with chopped cilantro if desired.
