Akki roti is a traditional South Indian flatbread made with rice flour and typically flavored with grated vegetables and spices. Here's a simple recipe to make akki roti:

Ingredients:
- 1 cup rice flour (akki hittu)
- 1/2 cup grated coconut (optional)
- 1 small onion, finely chopped
- 1 small carrot, grated
- 2-3 green chilies, finely chopped (adjust to taste)
- 2 tablespoons chopped fresh coriander leaves
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- Salt, to taste
- Water, as needed
- Oil, for cooking

Instructions:
1. In a mixing bowl, combine the rice flour, grated coconut (if using), chopped onion, grated carrot, chopped green chilies, chopped coriander leaves, cumin seeds, mustard seeds, turmeric powder, and salt. Mix well to combine all the ingredients.

2. Gradually add water to the mixture and knead to form a soft and pliable dough. The dough should hold together well and not be too dry or too sticky.

3. Divide the dough into equal-sized portions and roll each portion into a ball.

4. Heat a tawa or griddle over medium heat. Once hot, take a ball of dough and flatten it with your palms to form a disc, about 1/4 inch thick. You can also flatten the dough on a greased banana leaf or parchment paper to prevent sticking.

5. Carefully transfer the flattened dough onto the hot tawa. Drizzle a little oil around the edges of the roti and in the center.

6. Cook the akki roti for a few minutes on one side until it starts to turn golden brown and crisp.

7. Flip the roti using a spatula and cook on the other side until golden brown spots appear.

8. Repeat the process with the remaining dough to make more akki rotis.

9. Serve the hot akki rotis with chutney, pickle, yogurt, or any curry of your choice.
