- 1 tablespoon Caribbean curry powder

- 1 teaspoon ground turmeric

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon ground allspice

- 1 can (14 oz) coconut milk

- 1 cup vegetable or fish broth

- 2 tablespoons tomato paste

- 2 tablespoons fresh lime juice

- Salt and pepper to taste

- Fresh cilantro for garnish

- Cooked rice or roti for serving

### Instructions:

1. **Prepare the Curry Base:**

   - Heat vegetable oil in a large skillet or pot over medium heat.

   - Add chopped onion and sauté until it becomes soft and translucent.

   - Add minced garlic, grated ginger, and chopped Scotch bonnet peppers to the skillet. Sauté for another 1-2 minutes until fragrant.

2. **Add Spices:**

   - Stir in Caribbean curry powder, ground turmeric, ground cumin, ground coriander, and ground allspice. Cook for a minute until the spices release their aroma.

3. **Make the Curry:**

   - Pour in the coconut milk and vegetable or fish broth. Stir well to combine with the spices and aromatics.

   - Add tomato paste and fresh lime juice to the curry. Stir until the tomato paste is dissolved and well incorporated.

   - Season with salt and pepper to taste.

4. **Cook the Fish:**

   - Gently add the fish pieces to the curry, making sure they are submerged in the sauce.

   - Cover the skillet or pot and simmer the curry over low to medium heat for about 10-15 minutes, or until the fish is cooked through and tender.

5. **Serve:**

   - Once the fish is cooked, remove the curry from heat.

   - Garnish with fresh cilantro.

   - Serve hot with cooked rice or roti.

### Tips:

- Adjust the spiciness of the curry by varying the amount of Scotch bonnet peppers used. Remove the seeds for a milder flavor.

- Feel free to add additional vegetables such as bell peppers, carrots, or potatoes to the curry for extra flavor and texture.

- Serve Caribbean Fish Curry with a side of fried plantains, coconut rice, or steamed vegetables for a complete Caribbean-inspired meal experience.
