Filipino Fish Curry (Kare-Kareng Isda

 Filipino Fish Curry, also known as Kare-Kareng Isda, is a delightful dish that combines the flavors of traditional Filipino Kare-Kare with fish as the main protein. Here's a basic recipe to make Filipino Fish Curry at home:


### Ingredients:


- 1 lb (450g) firm white fish fillets, such as tilapia or cream dory, cut into serving pieces

- 2 tablespoons vegetable oil

- 1 onion, finely chopped

- 3 cloves garlic, minced

- 1 thumb-sized piece of ginger, sliced into thin strips

- 2-3 tablespoons shrimp paste (bagoong)

- 2-3 tablespoons peanut butter

- 2 cups water or fish stock

- 1 eggplant, sliced

- 1 bundle long beans (sitaw), cut into 2-inch pieces

- 1 bundle baby bok choy (pechay) or spinach leaves

- Salt and pepper to taste

- Cooked rice for serving


### Instructions:


1. **Prepare the Curry Base:**

   - Heat vegetable oil in a large skillet or pot over medium heat.

   - Add chopped onion and sauté until it becomes soft and translucent.

   - Add minced garlic and sliced ginger to the skillet. Sauté for another 1-2 minutes until fragrant.


2. **Add Shrimp Paste and Peanut Butter:**

   - Stir in shrimp paste (bagoong) and peanut butter. Cook for a minute until the peanut butter is melted and well incorporated with the aromatics.


3. **Make the Curry:**

   - Pour in water or fish stock and stir well to combine with the shrimp paste and peanut butter mixture.

   - Bring the mixture to a gentle simmer.


4. **Cook the Fish and Vegetables:**

   - Gently add the fish pieces to the curry, making sure they are submerged in the sauce.

   - Add sliced eggplant and long beans (sitaw) to the curry. Simmer for about 5-8 minutes, or until the vegetables are tender and the fish is cooked through.

   - Add baby bok choy (pechay) or spinach leaves to the curry. Cook for another 1-2 minutes until the greens are wilted.


5. **Season and Serve:**
