Gazpacho is a cold Spanish soup made primarily from ripe tomatoes, cucumbers, bell peppers, onions, garlic, bread, olive oil, vinegar, and seasonings. Here's a simple recipe to make Gazpacho:
Ingredients:
- 6 ripe tomatoes, roughly chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 2 slices stale bread, crusts removed
- 3 tablespoons red wine vinegar
- 1/4 cup extra-virgin olive oil
- Salt and pepper to taste
- Water, as needed
- Optional garnishes: diced cucumber, chopped bell peppers, croutons, fresh herbs
Instructions:
1. Place the chopped tomatoes, cucumber, bell peppers, onion, and garlic in a blender or food processor.
2. Tear the stale bread into pieces and add it to the blender.
3. Add the red wine vinegar, olive oil, salt, and pepper to the blender.
4. Blend the ingredients until smooth. If the mixture is too thick, you can add a little water to reach your desired consistency.
5. Taste the gazpacho and adjust the seasoning if needed, adding more salt, pepper, or vinegar as desired.
6. Transfer the gazpacho to a large bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
7. Before serving, give the gazpacho a good stir. Taste and adjust the seasoning again if needed.
8. Serve the gazpacho cold, garnished with diced cucumber, chopped bell peppers, croutons, or fresh herbs if desired.
