instant dosa

Here's a simple recipe for making instant dosa:

Ingredients:
- 1 cup rice flour
- 1/4 cup semolina (sooji)
- 1/4 cup all-purpose flour (maida)
- 1/2 cup yogurt (curd)
- 1 1/2 cups water
- 1/2 teaspoon cumin seeds
- 2-3 green chilies, finely chopped
- Handful of fresh coriander leaves, chopped
- Salt to taste
- Oil or ghee for cooking

Instructions:
1. In a mixing bowl, combine the rice flour, semolina, all-purpose flour, yogurt, and water. Mix well to form a smooth batter without any lumps.

2. Add the chopped green chilies, cumin seeds, chopped coriander leaves, and salt to the batter. Mix everything together until well combined.

3. Let the batter rest for about 10-15 minutes to allow the flavors to meld.

4. After resting, give the batter a quick stir. If the batter has thickened during resting, you can add a little more water to adjust the consistency. The batter should be of pouring consistency, similar to regular dosa batter.

5. Heat a non-stick dosa tawa (griddle) over medium heat. Make sure the tawa is properly heated before making the dosas.

6. Once the tawa is hot, pour a ladleful of batter onto the center of the tawa.

7. Using a circular motion, spread the batter evenly to form a thin dosa. If the batter doesn't spread easily, you can gently spread it with the back of the ladle.

8. Drizzle some oil or ghee around the edges and on the surface of the dosa. Cook the dosa on medium heat until the bottom turns golden brown and crispy.

9. Carefully flip the dosa using a spatula and cook the other side until it turns golden brown and crispy as well.

10. Once both sides are cooked to perfection, remove the instant dosa from the tawa and serve hot.

Instant dosa is best enjoyed with coconut chutney, tomato chutney, or sambar. It makes for a quick and easy breakfast or snack option. Enjoy your homemade instant dosa!
