Kulcha is a popular Indian flatbread that originated in North India, particularly in the Punjab region. It's typically made with all-purpose flour (maida), yogurt, baking powder, and other ingredients. Here's a basic recipe to make kulcha:
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup yogurt (plain)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tablespoons oil or ghee
- Water, as needed
- Butter or ghee, for brushing (optional)
- Chopped cilantro leaves, for garnish (optional)
- Sesame seeds or nigella seeds, for garnish (optional)
Instructions:
1. In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, sugar, and salt. Mix well to combine.
2. Add the yogurt and oil (or ghee) to the flour mixture. Mix until the ingredients are well combined and crumbly.
3. Gradually add water, little by little, and knead the dough until it comes together to form a soft and smooth dough. The dough should be soft but not sticky.
4. Cover the dough with a damp cloth or plastic wrap and let it rest for at least 2 hours. This allows the dough to ferment slightly and develop flavor.
5. After the resting period, divide the dough into equal-sized portions and roll each portion into a ball.
6. Flatten each ball slightly and roll it out into an oval or round shape, about 1/4 inch thick. You can sprinkle some sesame seeds or nigella seeds and chopped cilantro leaves on top for extra flavor.
7. Heat a tawa or griddle over medium heat. Once hot, carefully transfer the rolled-out kulcha onto the tawa.
8. Cook the kulcha for about 1-2 minutes on one side until bubbles start to form.
9. Flip the kulcha using a spatula and cook on the other side for another 1-2 minutes until both sides are cooked and golden brown spots appear.
10. If desired, brush the cooked kulcha with butter or ghee for added flavor.
11. Remove the kulcha from the tawa and place it on a plate. Repeat the process with the remaining dough to make more kulchas.
12. Serve the hot kulchas with your favorite curry, chole (chickpea curry), or any side dish of your choice.
