Missi roti is a popular North Indian flatbread made with a combination of whole wheat flour (atta) and gram flour (besan), along with various spices. Here's a simple recipe to make missi roti at home:

Ingredients:
- 1 cup whole wheat flour (atta)
- 1/2 cup gram flour (besan)
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 2 tablespoons chopped fresh coriander leaves
- 1 teaspoon ajwain (carom seeds)
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Water, as needed
- Oil or ghee, for cooking

Instructions:
1. In a mixing bowl, combine the whole wheat flour, gram flour, chopped onions, green chilies, coriander leaves, ajwain, cumin seeds, turmeric powder, red chili powder, and salt.

2. Mix well to combine all the ingredients.

3. Gradually add water and knead the mixture into a smooth and soft dough. The dough should be slightly sticky but manageable. Cover the dough and let it rest for 15-20 minutes.

4. After resting, divide the dough into small lemon-sized balls. Roll each ball between your palms to make them smooth.

5. Heat a tawa or griddle over medium heat.

6. Take a dough ball and dust it with some dry flour. Roll it out into a thin circle or oval shape, about 6-8 inches in diameter. The thickness should be around 2-3 mm.

7. Place the rolled-out roti gently on the preheated tawa. Cook for about 1-2 minutes on one side until you see bubbles forming.

8. Flip the roti using a spatula and cook on the other side for another 1-2 minutes. Brush a little oil or ghee on the cooked side.

9. Flip the roti again and cook until both sides are golden brown and cooked through, pressing lightly with a spatula.

10. Remove the missi roti from the tawa and place it on a plate. Repeat the process with the remaining dough balls to make more rotis.

11. Serve the hot missi rotis with your favorite curry, dal, or yogurt-based dip.
