Neer dosa, also known as "water dosa," is a popular delicacy from Karnataka, India. Here's how you can make it:
Ingredients:
- 1 cup rice (any variety, preferably raw rice)
- Water, as needed
- Salt to taste
- Oil for cooking
Instructions:
1. Rinse the rice thoroughly and soak it in water for 4-6 hours or overnight.
2. After soaking, drain the water from the rice.
3. In a blender or food processor, grind the soaked rice along with fresh water to a smooth batter-like consistency. The batter should be watery, similar to buttermilk.
4. Transfer the batter to a mixing bowl and add salt to taste. Mix well.
5. Heat a non-stick dosa tawa (griddle) over medium heat.
6. Once the tawa is hot, pour a ladleful of batter onto the center of the tawa and spread it evenly in a circular motion to form a thin dosa.
7. Drizzle some oil around the edges of the dosa and in the center.
8. Cook the neer dosa until the edges start to lift and the bottom turns golden brown.
9. Neer dosa is typically cooked only on one side. Once cooked, remove it from the tawa and fold it gently.
10. Repeat the process with the remaining batter, stirring the batter well before making each dosa.
11. Serve hot neer dosa with coconut chutney, sambar, or any side dish of your choice.
