Sure! Here's a basic recipe for making pav bhaji, a popular Indian street food:
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 2 cups mixed vegetables (e.g., cauliflower, peas, carrots), boiled and mashed
- 1 large onion, finely chopped
- 3-4 medium-sized tomatoes, finely chopped
- 1 capsicum (bell pepper), finely chopped
- 2-3 green chilies, finely chopped (adjust according to your spice preference)
- 1 tablespoon ginger-garlic paste
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Butter for cooking
- Fresh coriander leaves, chopped for garnish
- Lemon wedges for serving
- Pav (dinner rolls) for serving
Instructions:
1. Heat some butter in a pan or kadhai (Indian wok).
2. Add chopped onions and sauté until they turn translucent.
3. Add ginger-garlic paste and green chilies, and sauté for a minute.
4. Add chopped capsicum and sauté until it becomes soft.
5. Add chopped tomatoes and cook until they turn mushy and oil starts separating from the mixture.
6. Now add pav bhaji masala, red chili powder, and salt. Mix well and cook for a couple of minutes.
7. Add boiled and mashed potatoes and mixed vegetables to the pan. Mix everything together until well combined.
8. Add some water to achieve the desired consistency. Mash the vegetables using a potato masher or the back of a spoon.
9. Let the pav bhaji simmer for 5-10 minutes on low heat, stirring occasionally.
10. Once done, garnish with chopped coriander leaves and a dollop of butter.
11. Toast the pav (dinner rolls) with butter on a tawa (griddle) until they are golden brown.
12. Serve the hot pav bhaji with lemon wedges and toasted pav.
