Ingredients:
- 2 large russet potatoes, peeled
- 1 small onion
- 2 eggs, lightly beaten
- 1/4 cup (30g) all-purpose flour or matzo meal

- 1/4 teaspoon black pepper
- Vegetable oil, for frying
- Optional toppings: sour cream, applesauce, chopped chives, or smoked salmon
Instructions:
1. Grate the peeled potatoes and onion using a box grater or a food processor fitted with a grating attachment. Transfer the grated potatoes and onion to a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
2. In a large bowl, combine the grated potatoes and onion with the beaten eggs, flour or matzo meal, salt, and pepper. Mix until well combined.
3. Heat a generous amount of vegetable oil in a large skillet or frying pan over medium-high heat.
