Potato salad is a classic dish made with boiled potatoes, typically mixed with mayonnaise, mustard, onions, and various seasonings. Here's a simple recipe to make potato salad:
Ingredients:
- 2 pounds (about 900g) potatoes (such as Yukon Gold or red potatoes)
- 3/4 cup (180ml) mayonnaise
- 2 tablespoons (30ml) Dijon mustard
- 1/4 cup (60ml) chopped red onion
- 2 stalks celery, finely chopped
- 2 tablespoons (30ml) chopped fresh parsley
- Salt and pepper, to taste
- Optional: chopped dill pickles, hard-boiled eggs, cooked bacon, paprika for garnish
Instructions:
1. Wash and scrub the potatoes to remove any dirt. Leave the skins on for added texture and flavor, or peel them if preferred. Cut the potatoes into bite-sized chunks.
2. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.
3. Bring the water to a boil over high heat, then reduce the heat to medium and let the potatoes simmer until they are fork-tender, about 10-15 minutes.
4. While the potatoes are cooking, prepare the dressing by mixing together the mayonnaise, Dijon mustard, chopped red onion, celery, parsley, salt, and pepper in a large mixing bowl.
5. Once the potatoes are cooked, drain them well and let them cool slightly.
6. Add the warm potato chunks to the bowl with the dressing and gently toss until the potatoes are evenly coated.
7. Taste the potato salad and adjust the seasoning, adding more salt and pepper if needed.
8. If desired, add any optional ingredients such as chopped dill pickles, hard-boiled eggs, or cooked bacon for extra flavor and texture.
9. Cover the potato salad and refrigerate for at least 1-2 hours to allow the flavors to meld together.
10. Before serving, sprinkle the potato salad with paprika for garnish, if desired.
