Potato soup is a comforting and hearty dish that is perfect for cold weather or anytime you're craving a warm, satisfying meal. Here's a simple recipe to make potato soup:
Ingredients:
- 4-5 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups (960ml) vegetable or chicken broth
- 1 cup (240ml) milk or cream
- 2 tablespoons (28g) butter
- Salt and pepper, to taste
- Optional toppings: shredded cheese, crispy bacon bits, chopped chives, sour cream
Instructions:
1. In a large pot or Dutch oven, melt the butter over medium heat.
2. Add the chopped onion and minced garlic to the pot, and sauté until softened and fragrant, about 2-3 minutes.
3. Add the diced potatoes to the pot, along with the vegetable or chicken broth. Bring the mixture to a boil.
4. Reduce the heat to low, cover the pot, and let the soup simmer until the potatoes are tender, about 15-20 minutes.
5. Once the potatoes are cooked, use an immersion blender to blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend it in batches until smooth, then return it to the pot.
6. Stir in the milk or cream, and season the soup with salt and pepper to taste. Adjust the seasoning as needed.
7. Continue to cook the soup for another 5-10 minutes, stirring occasionally, to allow the flavors to meld together.
8. If the soup is too thick, you can add more broth or milk to reach your desired consistency.
