Ratatouille dish

Ratatouille is a traditional French vegetable stew originating from the Provence region. Here's how to make it:

Ingredients:
- 1 eggplant, diced
- 2 zucchinis, diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)

Instructions:
1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Add the diced eggplant, zucchinis, bell peppers, and tomatoes to the skillet.
5. Stir in the tomato paste, dried thyme, dried oregano, salt, and pepper.
6. Cook the vegetables, stirring occasionally, until they start to soften, about 10 minutes.
7. Reduce the heat to low, cover the skillet, and let the ratatouille simmer for another 20-30 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
8. Taste and adjust the seasoning if needed.
9. Serve the ratatouille hot, garnished with fresh basil leaves if desired.
