Set dosa, also known as sponge dosa, is a soft, fluffy, and slightly thick variation of the traditional dosa. Here's how you can make it:
Ingredients:
- Dosa batter (made from rice and urad dal)
- ½ teaspoon baking soda (optional)
- Salt to taste
- Oil or ghee for cooking
Instructions:
1. If using baking soda, mix it into the dosa batter until well combined.
2. Heat a non-stick dosa tawa (griddle) on medium heat.
3. Pour a ladleful of dosa batter onto the center of the tawa.
4. Using the back of the ladle, spread the batter in a circular motion to form a thick dosa, about 4-5 inches in diameter.
5. Drizzle some oil or ghee around the edges of the dosa and on the surface.
6. Cover the dosa with a lid and let it cook for 2-3 minutes on medium-low heat until the bottom turns golden brown and the top surface appears cooked.
7. Flip the dosa using a spatula and cook for another 1-2 minutes on the other side until golden brown.
8. Remove the set dosa from the tawa and repeat the process with the remaining batter.
9. Serve hot with chutney, sambar, or any side dish of your choice.
