tandoori roti

Tandoori roti is a popular Indian flatbread that is traditionally cooked in a tandoor, a cylindrical clay oven. Here's a simple recipe to make tandoori roti at home without a tandoor:

Ingredients:
- 2 cups whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- Ghee or butter, for brushing (optional)

Instructions:
1. In a mixing bowl, add the whole wheat flour and salt. Gradually add water and knead to form a smooth and soft dough. The dough should be slightly sticky but manageable. Cover the dough and let it rest for 15-20 minutes.

2. After resting, divide the dough into small lemon-sized balls. Roll each ball between your palms to make them smooth.

3. Preheat a tawa or griddle over medium-high heat.

4. Take a dough ball and dust it with some dry flour. Roll it out into a thin circle or oval shape, about 6-8 inches in diameter. The thickness should be around 2-3 mm.

5. Place the rolled-out roti gently on the preheated tawa. Let it cook for about 1-2 minutes on one side until you see bubbles forming.

6. Flip the roti using a spatula and let it cook on the other side for another 1-2 minutes. You can press lightly with a clean kitchen towel or spatula to ensure even cooking and to puff up the roti.

7. Once both sides are cooked and you see brown spots, remove the roti from the tawa and place it directly on the flame using tongs. Cook for a few seconds on each side until it puffs up and gets slightly charred.

8. Remove the tandoori roti from the flame and brush it with ghee or butter if desired.

9. Repeat the process with the remaining dough balls to make more tandoori rotis.

10. Serve the hot tandoori rotis with your favorite curry, dal, or yogurt-based dip.

Enjoy your homemade tandoori rotis with the authentic flavors and textures, even without a tandoor!
