Thai Fish Curry

 Thai Fish Curry, known as "Gaeng Ped Pla" in Thai, is a delicious and aromatic dish with a perfect balance of sweet, sour, salty, and spicy flavors. Here's a basic recipe to make Thai Fish Curry at home:


### Ingredients:


- 1 lb (450g) firm white fish fillets, such as cod or tilapia, cut into bite-sized pieces

- 2 tablespoons vegetable oil

- 2-3 tablespoons Thai red curry paste

- 1 can (14 oz) coconut milk

- 1 tablespoon fish sauce

- 1 tablespoon palm sugar or brown sugar

- 1 tablespoon lime juice

- 1 red bell pepper, sliced

- 1 onion, sliced

- 1 cup sliced mushrooms (optional)

- Thai basil leaves or cilantro for garnish

- Cooked rice for serving


### Instructions:


1. **Prepare the Curry Base:**

   - Heat vegetable oil in a large skillet or wok over medium heat.

   - Add Thai red curry paste to the skillet and stir-fry for about 1-2 minutes until fragrant.


2. **Add Coconut Milk:**

   - Pour in the coconut milk and stir until the curry paste is well combined with the coconut milk.

   - Bring the mixture to a gentle simmer.


3. **Season the Curry:**

   - Stir in fish sauce, palm sugar (or brown sugar), and lime juice. Adjust the seasoning to taste.

   - Let the curry simmer for a few minutes to allow the flavors to meld together.


4. **Add Vegetables and Fish:**

   - Add sliced red bell pepper, sliced onion, and sliced mushrooms (if using) to the curry. Stir to combine.

   - Gently add the fish pieces to the curry, making sure they are submerged in the sauce.


5. **Simmer the Curry:**

   - Let the curry simmer gently over medium-low heat for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork. Be careful not to overcook the fish.


6. **Serve:**

   - Once the fish is cooked, remove the curry from heat.

   - Garnish with Thai basil leaves or cilantro.

   - Serve hot with cooked rice.
