Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz/800g) whole peeled tomatoes
- 1 can (14 oz/400g) crushed tomatoes
- 2 cups (480ml) vegetable or chicken broth
- 1 teaspoon sugar (optional, to balance acidity)
- Salt and pepper to taste
- 1/2 cup (120ml) heavy cream or coconut milk (optional, for creamy version)
- Fresh basil leaves for garnish (optional)
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for another minute until fragrant.
3. Pour in both the whole peeled tomatoes and crushed tomatoes with their juices. Break up the whole tomatoes with a spoon or spatula.
4. Add the vegetable or chicken broth to the pot and stir to combine.
5. If using, add the sugar to balance the acidity of the tomatoes. Season with salt and pepper to taste.
