Akki Roti is a popular and delicious flatbread from Karnataka, India, made from rice flour. Here's a simple recipe to make Akki Roti:
Ingredients:
- 1 cup rice flour
- 1/2 cup finely chopped onions
- 1/4 cup grated carrots (optional)
- 2-3 green chilies, finely chopped
- 2 tablespoons chopped coriander leaves
- 1/2 teaspoon cumin seeds
- Salt to taste
- Water as needed
- Oil or ghee for cooking
Instructions:
1. In a mixing bowl, combine the rice flour, chopped onions, grated carrots (if using), chopped green chilies, chopped coriander leaves, cumin seeds, and salt.
2. Gradually add water to the mixture and knead it into a soft and pliable dough. The dough should be moist but not too sticky.
3. Divide the dough into small portions and shape each portion into a ball.
4. Take a ball of dough and place it on a clean, damp cloth or banana leaf.
5. Using your fingers, gently press and flatten the dough ball into a thin, round roti. You can also use a rolling pin to roll out the roti.
6. Heat a tawa or griddle over medium heat and grease it lightly with oil or ghee.
7. Carefully transfer the flattened roti onto the hot tawa and cook it until golden brown spots appear on the bottom side.
8. Flip the roti and cook the other side until golden brown spots appear.
9. Remove the cooked Akki Roti from the tawa and serve it hot with chutney, pickle, or any curry of your choice.
