Kyay Oh can be found at street food stalls, restaurants, and home kitchens across the country. Here's a basic recipe to make Kyay Oh at home:
Ingredients:
For the broth:
- 1 liter chicken or pork broth
- 2 cloves garlic, minced
- 2 shallots, minced
- 1-inch piece of ginger, sliced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon fish sauce
- Salt and pepper, to taste
For the toppings:
- 250 grams pork or chicken, thinly sliced
- 200 grams rice vermicelli noodles, soaked in hot water until softened
- 2 hard-boiled eggs, halved
- 1 lime, cut into wedges
- Fresh cilantro or green onions, chopped
- Fried garlic, for garnish
- Thinly sliced onions, for garnish
- Chili flakes or chili oil, for added spice (optional)
Instructions:
1. In a large pot, combine the chicken or pork broth, minced garlic, minced shallots, sliced ginger, ground turmeric, ground coriander, fish sauce, salt, and pepper. Bring the broth to a boil, then reduce the heat and simmer for about 20-30 minutes to allow the flavors to develop.
2. While the broth is simmering, prepare the toppings. Thinly slice the pork or chicken and set aside. Cook the rice vermicelli noodles according to package instructions and set aside.
3. Once the broth is ready, strain it to remove the garlic, shallots, ginger, and any other solids, leaving a clear broth.
4. To assemble the Kyay Oh bowls, divide the cooked rice vermicelli noodles among serving bowls. Top with the sliced pork or chicken, hard-boiled eggs, and any other desired toppings.
5. Ladle the hot broth over the noodles and toppings, making sure to cover everything evenly.
6. Garnish each bowl with chopped cilantro or green onions, fried garlic, thinly sliced onions, and a wedge of lime. Add chili flakes or chili oil for added spice if desired.
7. Serve the Kyay Oh hot and enjoy it with extra lime wedges on the side.
