Here's a simple recipe to make martabak manis at home:

Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1 1/2 cups coconut milk
- 1/4 cup melted butter or margarine
- Fillings of your choice (chocolate chips, grated cheese, chopped peanuts, etc.)
- Condensed milk (optional, for serving)

Instructions:
1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
2. In a separate bowl, beat the egg, then add the coconut milk and melted butter. Mix until smooth.
3. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms. Let the batter rest for about 15 minutes.
4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the skillet with oil or butter.
5. Pour a ladleful of batter onto the skillet, spreading it into a thick circle. Cook for about 2-3 minutes, or until bubbles form on the surface of the pancake.
6. Sprinkle your desired fillings (chocolate chips, cheese, peanuts, etc.) evenly over the surface of the pancake.
7. Carefully fold the pancake in half to enclose the fillings. Press down lightly to seal the edges.
8. Cook the filled pancake for another 2-3 minutes, or until golden brown on both sides and the fillings are melted and gooey.
9. Remove the martabak from the skillet and transfer it to a cutting board. Cut into slices and serve hot.
10. Optionally, drizzle condensed milk over the martabak before serving for added sweetness.
