Neer Dosa is a traditional and popular dish from Karnataka, known for its thin and delicate texture. Here's a simple recipe to make Neer Dosa:
Ingredients:
- 1 cup rice (preferably Sona Masuri or any short-grain rice)
- Water for soaking
- Salt to taste
- Oil or ghee for cooking
Instructions:
1. Wash the rice thoroughly and soak it in water for at least 4-5 hours or overnight.
2. After soaking, drain the water from the rice and transfer it to a blender.
3. Add salt to taste and blend the rice with water until you get a smooth and thin batter. The consistency should be similar to that of crepe batter.
4. Transfer the batter to a bowl and adjust the consistency by adding more water if necessary. The batter should be thin and pourable.
5. Heat a non-stick or cast-iron skillet over medium heat. Grease it lightly with oil or ghee.
6. Once the skillet is hot, pour a ladleful of the batter onto the center of the skillet and quickly spread it in a circular motion to form a thin dosa.
7. Drizzle a few drops of oil or ghee around the edges of the dosa.
8. Cook the dosa on medium heat until the edges start to lift and crisp up, and the surface of the dosa appears cooked. This should take about 1-2 minutes.
9. Carefully loosen the edges of the dosa using a spatula and gently fold it into half or quarters.
10. Remove the Neer Dosa from the skillet and transfer it to a serving plate.
11. Repeat the process with the remaining batter, greasing the skillet lightly before pouring each dosa.
12. Serve the Neer Dosas hot with chutney, sambar, or any curry of your choice.
