Poha, also known as flattened rice or beaten rice, is a popular breakfast dish in Maharashtra and other parts of India. It's made from flattened rice flakes, which are dehusked rice flattened into flat light dry flakes. Poha is nutritious, easy to digest, and quick to prepare. Here's a simple recipe for making Poha:
Ingredients:
- 1 cup poha (flattened rice)
- 1 medium-sized onion, finely chopped
- 1 medium-sized potato, peeled and diced
- 1 green chili, finely chopped (optional)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 8-10 curry leaves
- 2 tablespoons peanuts
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon oil
- Fresh coriander leaves for garnish
- Lemon wedges for serving (optional)
Instructions:
1. Rinse the poha in a colander under running water until it becomes soft. Drain the water completely and set aside.
2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to crackle.
3. Add asafoetida, curry leaves, and chopped green chili (if using). Sauté for a few seconds.
4. Add chopped onions and sauté until they turn translucent.
5. Add diced potatoes and peanuts. Mix well and cook until the potatoes are tender, stirring occasionally.
6. Once the potatoes are cooked, add turmeric powder and salt. Mix well.
7. Lower the heat and add the rinsed poha to the pan. Mix gently until everything is well combined and heated through.
8. Cover the pan and let it cook for 2-3 minutes on low heat, allowing the flavors to blend.
9. Turn off the heat and garnish with fresh coriander leaves.
10. Serve hot Poha with lemon wedges on the side for squeezing over the Poha (if desired).
