Sabudana Khichdi is a popular Maharashtrian fasting dish made from soaked tapioca pearls (sabudana), potatoes, peanuts, and spices. It's often consumed during religious fasting days or as a special breakfast item. Here's a recipe to make Sabudana Khichdi at home:
Ingredients:
- 1 cup sabudana (tapioca pearls)
- 2 medium-sized potatoes, peeled and diced
- 1/2 cup roasted peanuts, coarsely crushed
- 2-3 green chilies, finely chopped (adjust according to taste)
- 1 teaspoon cumin seeds
- 1 tablespoon ghee or oil
- 1 teaspoon sugar (optional)
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving (optional)
Instructions:
1. Rinse the sabudana under running water until the water runs clear. Then, soak the sabudana in enough water to cover them completely for at least 4-6 hours or overnight. Make sure the water level is just above the sabudana, as excessive water can make them mushy.
2. After soaking, drain the excess water from the sabudana using a colander. Let them sit in the colander for about 15-20 minutes to remove any excess moisture.
3. Heat ghee or oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
4. Add chopped green chilies and sauté for a minute.
5. Add diced potatoes to the pan and cook until they are golden brown and cooked through. You can cover the pan with a lid to cook the potatoes faster.
6. Once the potatoes are cooked, add the soaked and drained sabudana to the pan. Mix well to combine with the potatoes.
7. Add salt and sugar (if using) to the mixture. Mix well and cook for 5-7 minutes, stirring occasionally, until the sabudana turn translucent and become soft. Be gentle while stirring to prevent the sabudana from sticking to the bottom of the pan.
8. Add crushed peanuts to the sabudana mixture and mix well. Cook for another 2-3 minutes.
9. Turn off the heat and garnish the Sabudana Khichdi with freshly chopped coriander leaves.
10. Serve hot Sabudana Khichdi with lemon wedges on the side for squeezing over the khichdi, if desired.
