Café de olla

 "Café de olla" is a traditional Mexican coffee drink that's rich, flavorful, and infused with spices. It's typically brewed in a clay pot (olla) which imparts a unique flavor to the coffee. Here's how you can make café de olla at home:


Ingredients:


- 4 cups of water

- 4-6 tablespoons of ground coffee (preferably a medium-dark roast)

- 1 cinnamon stick (about 3 inches)

- 3-4 whole cloves

- 1 piloncillo cone (Mexican unrefined cane sugar) or 1/2 cup of brown sugar

- Optional: orange peel or star anise for additional flavor (optional)


Instructions:


1. In a medium saucepan, combine the water, cinnamon stick, whole cloves, and piloncillo cone (or brown sugar).


2. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar.


3. Once the mixture comes to a boil, reduce the heat to low and simmer for about 5 minutes to allow the spices to infuse into the water.


4. Add the ground coffee to the pot and stir well to combine.


5. Allow the coffee to simmer over low heat for an additional 5 minutes, stirring occasionally.


6. After simmering, remove the pot from the heat and let it sit for a few minutes to allow the coffee grounds to settle to the bottom.


7. Carefully pour the café de olla through a fine-mesh sieve or a coffee filter to strain out the coffee grounds and spices.


8. Serve the café de olla hot in mugs, optionally garnishing with a cinnamon stick or orange peel for an extra touch of flavor.
