This cucumber and olive salad is a light, refreshing, and flavorful appetizer that's perfect for any occasion. It's easy to make and comes together in just a few minutes.

Ingredients:

  • 2 medium cucumbers, thinly sliced (English or seedless cucumbers work well)
  • 1/2 cup pitted Kalamata olives, halved or quartered (other pitted olives like black or green olives can be used too)
  • 1/4 cup crumbled feta cheese (goat cheese or ricotta cheese are good substitutes)
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup chopped fresh herbs (dill, mint, or parsley work well)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Ingredients: Wash and dry the cucumbers. Slice them thinly and transfer them to a large bowl.
  2. Add the Olives and Cheese: Add the pitted and halved (or quartered) olives and crumbled feta cheese to the bowl with the cucumbers.
  3. Incorporate Optional Ingredients: If using red onion, chop it finely and add it to the bowl. Choose your favorite fresh herb (dill, mint, or parsley) and chop it to incorporate as well.
  4. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, and dried oregano (if using). Season with salt and freshly ground black pepper to taste.
  5. Combine and Serve: Pour the dressing over the cucumber, olive, and cheese mixture. Toss gently to coat all ingredients evenly. Taste and adjust seasonings as needed.

  • For a creamier salad, you can add 1-2 tablespoons of sour cream or plain yogurt to the dressing.
  • If you don't have fresh herbs, you can use 1 teaspoon of dried dill or mint instead.
