Cucumber and Olive Salad: A Refreshing and Simple Appetizer
This cucumber and olive salad is a light, refreshing, and flavorful appetizer that's perfect for any occasion. It's easy to make and comes together in just a few minutes.
Ingredients:
- 2 medium cucumbers, thinly sliced (English or seedless cucumbers work well)
- 1/2 cup pitted Kalamata olives, halved or quartered (other pitted olives like black or green olives can be used too)
- 1/4 cup crumbled feta cheese (goat cheese or ricotta cheese are good substitutes)
- 1/4 cup chopped red onion (optional)
- 1/4 cup chopped fresh herbs (dill, mint, or parsley work well)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the Ingredients: Wash and dry the cucumbers. Slice them thinly and transfer them to a large bowl.
- Add the Olives and Cheese: Add the pitted and halved (or quartered) olives and crumbled feta cheese to the bowl with the cucumbers.
- Incorporate Optional Ingredients: If using red onion, chop it finely and add it to the bowl. Choose your favorite fresh herb (dill, mint, or parsley) and chop it to incorporate as well.
- Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, and dried oregano (if using). Season with salt and freshly ground black pepper to taste.
- Combine and Serve: Pour the dressing over the cucumber, olive, and cheese mixture. Toss gently to coat all ingredients evenly. Taste and adjust seasonings as needed.
Tips:
- For a creamier salad, you can add 1-2 tablespoons of sour cream or plain yogurt to the dressing.
- If you don't have fresh herbs, you can use 1 teaspoon of dried dill or mint instead.
- To add a bit of spice, you can sprinkle a pinch of red pepper flakes on top of the salad before serving.
- For a more substantial salad, you can add cooked protein like grilled chicken or shrimp.
- This salad is best served chilled. Prepare it ahead of time and refrigerate for at least 30 minutes to allow the flavors to meld.
This cucumber and olive salad is a versatile appetizer that can be easily customized to your preferences. Enjoy its refreshing flavors and beautiful presentation!
