Here's a recipe for making Eggplant Chips:
Ingredients:
- 2 medium eggplants (brinjals)
- 2-3 tablespoons olive oil
- Salt and pepper to taste
- Optional seasoning: paprika, garlic powder, onion powder, dried herbs (such as oregano or thyme)
Instructions:
1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
2. Wash the eggplants and slice them into thin rounds, about 1/4 inch thick. You can leave the skin on or peel it, depending on your preference.
3. In a large bowl, toss the eggplant slices with olive oil until they are evenly coated. You can use more or less olive oil depending on your preference.
4. Season the eggplant slices with salt, pepper, and any optional seasonings you like. Paprika, garlic powder, onion powder, or dried herbs can add extra flavor.
5. Arrange the seasoned eggplant slices in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure even baking.
6. Bake the eggplant slices in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
7. Once the eggplant chips are done, remove them from the oven and let them cool slightly before serving.
