Eggplant Parmesan is a delicious Italian dish made with layers of breaded and fried eggplant slices, marinara sauce, and cheese. Here's a recipe to make Eggplant Parmesan:
Ingredients:
- 2 large eggplants (brinjals), sliced into rounds
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 3 eggs, beaten
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh basil leaves
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Preheat your oven to 200°C (400°F).
2. Place the beaten eggs in one shallow dish, and combine breadcrumbs and grated Parmesan cheese in another shallow dish. Season the breadcrumbs mixture with salt and pepper.
3. Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere. Repeat with all the eggplant slices.
4. Heat olive oil in a large skillet over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
5. Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange a layer of fried eggplant slices on top of the sauce.
6. Spoon more marinara sauce over the eggplant slices, then sprinkle with shredded mozzarella cheese and chopped basil leaves. Repeat the layers until all the eggplant slices are used, ending with a layer of marinara sauce and mozzarella cheese on top.
7. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes, until the cheese is melted and bubbly.
8. Remove the foil and continue baking for another 10-15 minutes, or until the cheese is golden brown and the sauce is bubbling.
9. Let the Eggplant Parmesan cool for a few minutes before slicing and serving.
