Here's a recipe for a Grilled Eggplant Sandwich:

Ingredients:
- 1 large eggplant (brinjal), sliced into rounds
- 4 slices of crusty bread (such as ciabatta or sourdough)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 4 slices of fresh mozzarella cheese
- Handful of fresh basil leaves
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:
1. Preheat your grill or grill pan to medium-high heat.

2. In a bowl, toss the sliced eggplant, bell peppers, and red onion with olive oil, balsamic vinegar, salt, and pepper until evenly coated.

3. Grill the sliced vegetables on the preheated grill, turning occasionally, until they are tender and lightly charred, about 5-7 minutes for the eggplant and 3-4 minutes for the peppers and onions.

4. While the vegetables are grilling, lightly toast the slices of bread on the grill until they are warm and have grill marks, about 1-2 minutes per side.

5. Once the vegetables are done grilling, assemble the sandwiches. Place a slice of fresh mozzarella cheese on each slice of toasted bread. Top with grilled eggplant, bell peppers, red onion, and fresh basil leaves.

7. Place the assembled sandwiches back on the grill and close the lid (or cover with foil) to melt the cheese and warm everything through, about 2-3 minutes.
