Ingredients:

  • For the Skewers:

    • 1 medium cucumber, sliced into 1/2-inch rounds
    • 1 red bell pepper, cut into 1-inch squares
    • 1 yellow bell pepper, cut into 1-inch squares
    • 1 red onion, cut into 1-inch wedges
    • 1 container cherry tomatoes
    • 1 package black olives, pitted (optional)
    • 1 package feta cheese cubes, marinated (optional)
    • 1 package of your favorite pre-made skewers (wooden or bamboo)
  • For the Hummus (optional):

    • 1 can (15 oz) chickpeas, drained and rinsed
    • 1/4 cup tahini
    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 1 clove garlic, minced
    • 1/4 cup water (more as needed)
    • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables: Wash and chop all the vegetables. If using olives or feta cheese, drain and marinate them according to package instructions (optional).

  2. Assemble the Skewers: Thread the vegetables and cheese (if using) onto the skewers in an alternating pattern for a visually appealing presentation.
