hummus and veggie skewer recipe that's perfect for a party appetizer or a light lunch:
Ingredients:
For the Skewers:
- 1 medium cucumber, sliced into 1/2-inch rounds
- 1 red bell pepper, cut into 1-inch squares
- 1 yellow bell pepper, cut into 1-inch squares
- 1 red onion, cut into 1-inch wedges
- 1 container cherry tomatoes
- 1 package black olives, pitted (optional)
- 1 package feta cheese cubes, marinated (optional)
- 1 package of your favorite pre-made skewers (wooden or bamboo)
For the Hummus (optional):
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 cup water (more as needed)
- Salt and pepper to taste
Instructions:
Prepare the Vegetables: Wash and chop all the vegetables. If using olives or feta cheese, drain and marinate them according to package instructions (optional).
Assemble the Skewers: Thread the vegetables and cheese (if using) onto the skewers in an alternating pattern for a visually appealing presentation.
Make the Hummus (optional): In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, and water. Blend until smooth and creamy, scraping down the sides as needed. Add more water, a tablespoon at a time, if the hummus is too thick. Season with salt and pepper to taste.
