Blueberry Coffee Cake


 Here's a recipe for Blueberry Coffee Cake that's sure to please:

Ingredients:

  • For the Cake:
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup granulated white sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 1/4 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup sour cream
    • 1 1/2 cups fresh or frozen blueberries
  • For the Crumble:
    • 1/2 cup (1 stick) unsalted butter, softened
    • 1/2 cup granulated white sugar
    • 1/2 cup packed light brown sugar
    • 1 cup all-purpose flour
    • 1/4 teaspoon cinnamon

Instructions:

  1. Preheat oven: Preheat oven to 350°F (175°C).
  2. Prepare pan: Grease and flour a 9x13 inch baking dish.
  3. Cream butter and sugar: Cream together the softened butter and sugar until light and fluffy.
  4. Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla.
  5. Mix in dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  6. Fold in blueberries: Gently fold in the blueberries.
  7. Prepare crumble: Combine the crumble ingredients in a small bowl until crumbly.
  8. Assemble: Pour the batter into the prepared pan. Top evenly with the crumble mixture.
  9. Bake: Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool: Let the cake cool completely before slicing.

Tips:

  • For a stronger cinnamon flavor, add an extra 1/4 teaspoon of cinnamon to the crumble topping.
  • If you prefer a sweeter cake, you can add an extra tablespoon of sugar to the batter.

  • Serve warm with a dollop of whipped cream or a pat of butter.

Variations:

  • Lemon Blueberry Coffee Cake: Add the zest of one lemon to the batter and a tablespoon of lemon juice to the crumble topping.  
  • Orange Blueberry Coffee Cake: Add the zest of one orange to the batter and a tablespoon of orange juice to the crumble topping.
  • Walnut Blueberry Coffee Cake: Add 1/2 cup chopped walnuts to the crumble topping for a nutty crunch.
